CHEF PROFILE Dan Capper

Born in London, Dan’s first job was as an apprentice at Churchill Intercontinental and the prestigious Claridges. After he concluded his apprenticeship, Dan became a highly successful culinary Chef. He has worked at some of the most respected and high-profile restaurants and venues around the globe. Dan likes to draw inspiration for his dishes from local produce available, childhood memories and from travel experiences all over the world. Since moving to Australia, Dan has been exposed to many different cultures and styles of food. He brings these new experiences to his work and creates superb authentic and tantalizing dishes. Dan has been at The Springs since day one of its opening in 2013 when he started as a Sous Chef. Today, he is the Executive Chef. Dan has more than three decades of hospitality industry experience and is a champion of the Farm to Fork movement. Dan’s menus work with what’s in season and Dan sources local produce where possible. Little Creek Cheeses (Wyong), pecans from the Pecan Lady (Somersby), La Tartine Organic Sourdough (Somersby), citrus from East Coast beverages and locally sourced produce such as avocados, rhubarb and oranges. "Weekend Lunches with Chef Dan" are an experience not to be missed.
