A natural attraction of the Central Coast is the huge variety of bushland parks, trails and stunning lookouts to enjoy on foot, on your bike, and even by horse. Central Coast Council manages a network of bushland and other natural reserves in the Coastal Open Space System (COSS). These reserves are places where our native plants, animals, fungi and other living organisms can thrive. Access to some reserves and some parts of the reserves is prohibited to allow native species to remain undisturbed. But in others Council has provided picnic areas, lookouts and walking tracks so that residents and visitors can experience and enjoy the natural environment. Bushwalking - Our reserves have many walking tracks to explore from 20 minute gentle circuit tracks, to challenging full day walks. They lead through a variety of habitats including lush rainforest, towering wet sclerophyll forests and wildflower-filled ridge-top woodlands. Rumbalara and Katandra Reserves - The Railway to Rainforest walk leads from Gosford railway station to the rainforest at Seymour Pond, in Katandra Reserve in Holgate. This is an extensive 11 kilometre

of bushland reserve fire trails. Travel slowly, keep to the marked trails and be aware that there may be other users. Picnics and whale watching Our bushland reserves have several large picnic areas to enjoy. You may want to try one of our hilltop picnic areas St John’s Picnic Area in Katandra Reserve at Mount Elliot, Yaruga Picnic Area in Rumbalara Reserve at East Gosford, Honeman’s Rock Picnic Area in Kincumba Mountain Reserve at Kincumber. Whale watching - Each year between June and November humpback whales migrate northwards from Antarctica heading for the southern Great Barrier Reef where they give birth. There are many places along the coast to view whales during the migration period. The higher vantage points such as Crackneck Lookout at Bateau Bay, Captain Cook Lookout at Copacabana are great places. Lookouts - Many lookouts provide outstanding views of the coastline, waterways, bushland and urban areas. Some of the easier access lookouts in the bushland reserves are: Marie Byles Lookout at Killcare Heights, St John Lookout in Katandra Reserve at Mount Elliot, Yaruga Lookout in Rumbalara Reserve at East Gosford.

return walk (22km all up) that allows views of some of the most spectacular landscapes in the Coastal Open Space System. There are a number of shorter loop walks available if time is limited. The walk can be accessed from the Donnison Street entrance to Rumbalara Reserve or off the Katandra Road entrance to Katandra Reserve. Picnic and barbecue facilities are provided in both reserves. Kincumba Mountain Regional Reserve - is accessible from Terrigal, Green Point and Kincumber. The Kanning Walk is a short walk full of interesting plants and rock formations. The Sid Pulsford fire trail provides a longer experience for walkers and bike riders wanting to explore the reserve further. The main picnic area can be reached by car from Kincumber Street, Kincumber. Jogging Our bushland reserves can be a great place to get out of the traffic and into nature. But be aware that many tracks and trails are not hardened and may be uneven or crossed by roots and other obstructions. Be ready, too, for other users. T he Terrigal Boardwalk and upgraded rockpool is now open for visitors..... significantly providing a new attraction for and significantly improving access between The Haven and Terrigal Beach promenade. Central Coast Council Chief Executive Officer, David Farmer said the boardwalk and rockpool will deliver many social, health and economic benefits for our community. “The Terrigal Boardwalk and upgraded rockpool will deliver a great visitor drawcard to boost the region’s economy whilst providing a safe and inclusive space for social connection and to encourage active lifestyles,” Mr Farmer said. “This infrastructure provides a place where everyone can participate and enjoy this popular ocean front area. I encourage our community to head to Terrigal to check it out, enjoy the fresh air and sample what local businesses have on offer.” The 277-metre-long boardwalk was designed to complement the natural environment and composed of materials that can withstand the elements to ensure longevity and ease of maintenance. The boardwalk features a viewing platform, Terrigal Boardwalk and Rockpool for locals and visitors to enjoy

In addition, concept designs were led by studies and an environmental assessment to ensure all impacts and risks were considered,” Mr Persson said. “I’m pleased that the opening of this new attraction has come at a time when our local businesses need it most with effects from COVID still being felt. As a regional destination tourism is vital to our economy and these new attractions will provide an extra boost. “Council was able to deliver this infrastructure for the

Mediterranean Diet for Health and Longevity What is the Mediterranean diet? T he Mediterranean diet is based on the traditional eating habits from the 1960s of people from countries that surround the Mediterranean Sea, such as Greece, Italy, and Spain, and it encourages the consumption of fresh, seasonal, and local foods. The Mediterranean diet is not a single prescribed diet, but rather a general food- based eating pattern, which is marked by local and cultural differences throughout the Mediterranean region. What does the science say? Far frombeing a hype diet, the health benefits linked to the Mediterranean diet are supported by scientific evidence. The Mediterranean diet is associated with lower all- cause mortality and morbidity (disease occurrence), and has been linked to numerous health benefits. The traditional Mediterranean diet is now the most researcheddietarypatternworldwideanda recent ‘umbrella’ review of 13 meta-analyses of observational studies and 16 meta-analyses of randomised controlled trials investigating the link between adherence to a Mediterranean diet and 37 different health outcomes (covering more than 12.8 million people), has shown that adherence to a Mediterranean diet is protective against deaths from all causes, and from heart disease and stroke, diabetes, some cancers, neurodegenerative diseases and Alzheimer’s and other dementias. The Mediterranean dietary pattern was recently awarded the best diet of 2019 by the US News and World Report. The review analysed 41 different diets and found the Mediterranean diet was the best diet for healthy eating, also emerging as the best plant-based diet, best diet for diabetes and easiest diet to follow. These key foods and ingredients can easily be incorporated into any diet. Tasty Mediterranean Spinach Frittata

INGREDIENTS 8 eggs 1 / 4 cup milk pinch salt 1 / 2 tsp dill 1 / 2 tsp paprika 1 tsp dried oregano 1 / 2 tsp black pepper 1 / 4 tsp baking powder (optional) 6 oz chopped spinach, squeezed to reduce moisture 1 / 2 cup finely chopped onion 1 cup chopped fresh parsley 3 tbsp chopped fresh mint leaves 3 garlic cloves, minced 200 grams crumbled feta cheese Extra virgin olive oil Salad for top: 6 baby tomatoes, halved 1 lebanese cucumber diced 1 / 2 cup chopped fresh parsley leaves salt, to taste

1 / 2 tsp black pepper 1 tsp ground sumac 2 tbsp extra virgin olive oil 2 tsp freshly squeezed lemon juice

METHOD: Preheat oven to 180 o c.

1. In a large bowl, whisk together eggs, spices, baking powder, and pinch of salt. 2. Add spinach and all remaining ingredients to the egg mixture. Mix well to combine. 3. In a 12-inch oven safe pan, heat 2 tbsp olive and pour in the egg mixture. Give the pan a gentle shake to allow the egg mixture to spread well. Cook on medium-high heat for about 4 minutes or so allowing the bottom of the eggs to settle. Transfer to heated oven to finish cooking (bake for 8 minutes or until eggs are cooked through and the top is firm and no longer runny.) Serve with salad on top - delicious!

It is more beneficial if you dress your children in bigger sized clothing as this makes it easier for them to take it off. There can be two transitions to work through. The first is to the potty and then from the potty to the toilet. The ideal age to start potty training is when the child is 2-3 years old. Continue to encourage your child through all phases of the process, even if there is a timing failure at first.” 2. Empower your child to communicate with you “Ask your child every now and then - “do you need to go?” Encourage them to tell you or another adult when they feel the urge to go. It is also useful to stimulate discussions and ask them to communicate when they need to do a number one or number two.” “It doesn’t matter how small or big the achievement is, or even if the toddler doesn’t complete the entire routine successfully - praise them for the part that they were able to do. Rewarding your child reinforces positive support. This can be in the form of reward charts, verbal praise or stickers. As the toddler achieves each stage, reduce the amount of praise.” 4. Verbalise and gesture to your child “Show and help your child practise pulling their pants down and up when toilet training. Additionally, explain to them the process of washing and wiping hands and what they need to do. By verbalising and gesturing to your child what toilet training includes, this helps them visualise and understand the process.” 3. Praise your child for every progress, no matter how small

getting your toddler to practise sitting on the ‘big potty’. You will need to buy a step and a smaller seat that fits securely inside the existing toilet seat.” 9. For kids with gross motor difficulties “Have steps over the toilet or a low toilet (if possible) or a rail for kids to hold onto. Extra steps can be useful for children who can’t walk.” 10. Lifting your toddler/non-mobile child “If you need to lift your toddler or non-mobile child, bend your knees and slowly stand up, so you don’t twist your back. Help your child to do as much as possible. If they can hold a rail or assist with standing, ensure there is enough time for them to plan their movement so you don’t risk injuring yourself.”
