Central Coasts favourite farmers market - Gosford City Farmers Market W hat exactly is a farmers market? And why should I support them? A farmers' market is a physical retail market space intended to sell foods directly grown by farmers to consumers. Farmers' markets may be indoors or outdoors. When you go to the Gosford City Farmers Market at the Gosford SHOWGROUND you have a unique opportunity to interact directly with local farmers, producers and artisans. Where else but at Gosford City Farmers Market can you buy home grown produce direct from the farmer – from the person who grew, nurtured and made the product. At the weekly farmers market you not only get to meet the maker and the farmer, you can ask about how and where it’s grown or made, how best to store or use it. It’s an experience that cannot be replicated on a daily basis. Our farmers tend crops, timing their harvests to ensure your produce is as fresh as can be, which is not something any store can duplicate daily. This is little of what you can find at Gosford Showground every Sunday. It is a haven for fresh tasty produce with a wide range of primary produce including free range eggs, dressed poultry, pork, bacon, jams, preserves, stuffed olives, macadamia nuts, fresh baked sourdough breads, fruits, vegetables, meats, cheeses, honey, flowers and sometimes prepared foods and beverages as well as “food to eat” vendors. INGREDIENTS: 16 Green King Prwns 1 Large Ripe Pineapple, leaves intact,halved lengthways 250g castor sugar 80ml water 2 long red chillies, seeded, finely sliced 2 garlic cloves, finely diced 3cm piece fresh ginger, peeled, cut into matchsticks 3 kaffir lime leaves, finely shredded 1 tblsp fish sauce Juice of 3 limes 2 tblsp extra virgin olive oil sea-salt and ground black pepper to taste

1 cup mint leaves, torn 2 cups coriander leaves lemon wedges to serve (optional)

METHOD 1. Butterfly prawns - remove heads, keeping tails intact. Cut prawns lengthways, being careful not to cut right through. Remove digestive tract. 2. Working on a plate use a sharp knife to cut around edges of one of the pineapple halves, leaving a 2cm border. Remove flesh, leaving pineapple shell intact for serving. Remove core and discard. Transfer flesh and juices to a large bowl. 3. Remove skin from remaining half of pineapple. Slice flesh lengthways to create long pieces, but don't worry if pieces break. 4. Preheat a barbecue hotplate over a high heat. 5. Reserving juices, cook pineapple pieces, turning occasionally, for 4 minutes or until caramelised. Transfer to a chopping board, cut into small chunks, set aside. 5. Put sugar and water in a medium saucepan and bring to the boil over a high heat. Reduce heat to medium and simmer 8 mins or until golden caramel forms. Remove from heat, stir in chillies, garlic, ginger, fish sauce, lime juice and lime leaves, 2 tblsp of reserved pineapple juice and caramelised pineapple pieces. Bring to simmer over a medium heat, then cook 4 mins or until softened and liquid is reduced by half. Remove from heat, set aside. 6. Drizzle oil over prawns and season, cook 2 mins then turn, cook 1 minute 7. Spoon pineapple mixture into empty shell and put on a large serving platter. Place prawns around pineapple and scatter mint, coriander leaves over. Serve with lemon wedges.
