“Aged care is not a job, it is a way of life,” states Mandeep Singh, Facility Manager at Infinite Care Chamberlain Gardens. In 2015, when Mandeep took an IT role in an aged care facility he had decided within a week he was destined to stay on a management role because he loved it so much! “Every day there was a smile and a thank you, and that sense of community service and giving to the seniors was tangible. I wanted to be a part of it,” says Singh. He states he has big plans for the Wyoming home and states, “I plan to take this home back to the glory days where Chamberlain Gardens was a home of choice, and people are happy to leave their loved ones in our care, to be looked after, well fed and well cared for”. The planned café is one example that he knows will bring the community together. Mandeep says that more staff education is a vital component of driving change and he wants to educate the team to stay compassionate and feel they are around their

2024 Lakes Festival program - Local businesses register NOW
C entral Coast Council is inviting businesses, community groups and event organisers to propose an event or activity to be a part of the annual 10-day Lakes Festival program celebrating the Coast’s diverse waterways. The Lakes Festival, scheduled to run from 8-17 November 2024, is an annual reminder of the variety of waterways available on the Central Coast. The program brings together an array of local organisations and businesses to host a range of family-friendly activities or events each November. Council’s Unit Manager Community and Culture, Glenn Cannard said The Lakes Festival is one of the region’s biggest events which debuts every spring and is made special by locals who host a variety of entertaining and innovative activities. “The calendar of events linked to The Lakes Festival Program last year attracted more than 10,000 festival goers,” Mr Cannard said. “This year we are continuing to seek expressions of interests from new and returning businesses, companies,

Ways to encourage kids to eat healthy
E ating healthy food is vital for brain and body development but it can be hard at times to get kids to eat those fruits and veggies. By having them grow their own string beans, carrots and lettuce, they will have a sense of pride in eating what they have “created.” This, in turn, will emphasize the importance of healthy eating. Kids will soon learn to love eating strawberries, blueberries and even broccoli! Kids learn best when engaging all their senses. With gardening, kids can touch and feel the dirt, seeds and flowers, see the vibrant colours and varied sizes of the plants, hear the sound of the vegetable when it is taken from the plant and smell the amazing scents of the flowers. Allowing all the senses to be involved helps kids understand and grasp the concept of gardening along with all the math and scientific concepts that go along with it. Gardening is a wonderful introduction into the world of science especially botany, biology and chemistry. When kids plant their first
Rather than limiting yourself to the weekly supermarket run, take your family to a local farmer’s market (or to the farm itself) and meet the people who grow the food. Picking berries from a vine can help nurture a lifelong love of good eating and environmental stewardship. Visiting a dairy farm can teach children where their milk comes from (and why we should care about what goes in it). Planting tomatoes and melons in the garden may tempt a child to try the fruits of their labour. If you stock the kitchen exclusively with healthy treats, children will eat them. As your children grow, stock good snacks in cabinets and shelves that they can reach without your help. Some kids eat more when they’re in the car than when they’re at the table simply because active play isn’t a viable alternative when you’re strapped in. Make sure you’re prepared with nutritious snacks whether you’re driving. Good choices include sliced apples, carrot sticks, whole grain crackers, light popcorn, raisins and water bottles.

Simple, no-cook recipes like frozen yogurt popsicles or fruit parfaits are an excellent way to get young chefs interested in healthy cooking and eating. Teach kids where their food comes from.
RAW BLUEBERRY & MACADAMIA CHEEESECAKE
1. Soak the macadamia nuts in water for at least 2 hours, or preferably overnight. Grease a 20 cm spring-form cake tin with coconut oil. 2. Put all the coconut base ingredients in a food processor and grind together until the mixture resembles a sticky crumble. Press the mixture firmly into the cake tin and set aside. 3. Drain the macadamia nuts and place in a high-speed blender with the maple syrup, lemon juice, coconut oil and vanilla. Blend to a thick, creamy consistency, then pour half the macadamia mixture into the cake tin. 4. Add the blueberries to the remaining mixture in the blender. Blend on high speed until the mixture is a vibrant purple colour and the blueberries have dissolved. Pour the mixture into the cake tin, smooth and level the top with a spatula. 5. Cover with plastic wrap and set in the fridge for at least 2 hours. Decorate with extra blueberries or raspberries. This cheesecake will keep for a few days in the fridge.

2 cups raw macadamias 1/2 cup maple syrup juice of 1 lemon 3/4 cup coconut oil, melted 1 teaspoon pure vanilla extract 1 cup fresh or frozen blueberries fresh blueberries or raspberries, to garnish (optional) Nutty coconut base 1 1 /2 cups raw walnuts or almonds 5 dates, pitted 1/4 cup desiccated coconut 1 tablespoon maple syrup

Traditional vs Modern Over recent years we have seen the white wash/ lime wash/ beach cottage effect come into its own. This trend will continue for a while yet. Degree of feature, knot and grain On a small sample, a plank with many knots, strong crown grain and features can look busy, but when it is laid in a larger area the eye does not see the individual marks but the impression and overall colour of the floor. No one on entering a room focuses on a single plank. On the other hand if you want the floor to be more of a blank canvas to display your furniture on, bamboo has very little feature and will give you that effect. 3. Light vs Dark Light colours in small areas may give an impression of space, while darker floors will accentuate softer coloured walls or furniture. The darker colours will create a more dignified and stately effect while the lighter colours will brighten a room. Be mindful of the style and colours of the furniture that will be in the rooms. Method: 1. Cut beef into 3cm pieces. Heat oil in large saucepan; cook beef, in batches, stirring, until browned. 2. Add garlic and onion; cook, stirring, until onion is soft. 3. Add undrained crushed tomatoes, stock, and sauce; simmer, covered, about 1 1/2 hours or until beef is tender. 4. Add remaining ingredients; simmer, uncovered, about 5 minutes or until thickened slightly. 5. Serve with mashed potatoes or pasta and sprinkled with extra chopped parsley, if desired.

fibre each day to stay healthy. There are three different types of fibre, each with its own important role in maintaining a healthy digestive system. Insoluble fibre is found in wholegrain and wholemeal breads, crispbreads, bran cereals and vegetables. It helps prevent constipation. Soluble fibre is found in fruit, oats, psyllium and legumes such as baked beans and lentils. It helps to reduce blood cholesterol, regulate blood sugars, and maintain fluid in the faeces. Resistant starch is found in barley, oats, black rye bread, muesli, sweet corn, cooled cooked potatoes, rice and bananas. It is often added to bread and breakfast cereals. It provides nourishment to ‘friendly’ bacteria in the bowel. It’s best to get your fibre from whole foods such as grains, legumes, vegetables, and fruits. However, if you struggle with this, a fibre supplement can help. Soluble fibre supplements based on guar gum and psyllium can help lower cholesterol and aid digestion. Too much unprocessed bran can interfere with absorption of minerals such as iron, but 1 or 2 tablespoons a day is ok. Make sure you drink enough water as well. What is regular? Although most people have one bowel movement a day, others go several times a day, while some people can go without for days or more, without harm. Going to the toilet as soon as you feel the urge helps keep the body’s signals working well. Blood in the stool, or pain, is not normal. A significant, ongoing change in your usual habits also needs investigation. In either case, see your doctor. What about wind? Intestinal gas is a normal part of our digestive process and is created by beneficial ‘friendly’ bacteria that live in the bowel. Increasing fibre in your diet generally leads to an increase in gas. How smelly the gas is depending on the food eaten, and smelly gas is not a sign of ill health. In general, wind is a social issue, not a sign of a health problem. It might not seem obvious, but getting regular exercise is very good for those who suffer from bloating and constipation. Faeces are mainly water, so not drinking enough fluids can make constipation worse.
